Chocolate Truffles

8 ounces chocolate chips
1/2 cup heavy whipping cream
1 tsp vanilla
1/3 cup cocoa powder

-In a crockpot, combine cream, chocolate chips, and vanilla
-Once the mixture has melted, pour into a bowl and let cool for at least 2 hours
-Once the consistency is solid and has formed a ganache, scoop a teaspoon amount and form into balls (work quickly they will melt)
-Refrigerate for 30 minutes and roll in cocoa powder

*Get creative and decorate your truffles with sprinkles, coconut, graham cracker crumbs, etc.
