When I'm in the grocery store I often peruse the vegetable reject area where they bundle up the produce that's not quite perfect and fresh and sell it for a fraction of its original worth. In the bin I found a soup starter pack for .68 cents, which usually cost around $2.50 and two pretty decent looking eggplants for a $1.38 that usually cost around $4 bucks. I was psyched! I had a few days off and I could try my hand at cooking something different.

So Monday, I took on one of my favorite dishes, eggplant rollantini. I didn't want to screw it up so I approached every good cook and Italian mom I knew at church Sunday and was surprised to learn that none of them had a really good recipe for eggplant rollantini. My Pastor's wife recommended that I go to the Food Network and look up Giada's recipe.

It called for grilling the eggplant and not frying which I thought was great and would save me a few thousand calories. The dish was tasty enough but believe me unfried eggplant is a little slimy and is simply not as tasty as the crispy, breaded and greasy goodness of the fried. Next time I'm frying it! I won't be skimping on taste. I'll just eat less of it. However, the fun was in the challenge.
