Erica’s Sweets with Shawn & Sue – Key Lime Cupcakes

She’s young and she has dreams.  And in some way, we think we’re helping her get closer to her dream.  She wants a bakery/sweet shop and you know what, she’ll have one someday!  But for now she bakes for The Ocean County Breakfast Show every Friday morning and shares her everything home-made goodies!!/ericas.sweets

Today’s sweet is The Key Lime Cupcake:

Key lime pie cupcakes
1 cup sugar
1/2 cup salted butter Softened
1 1/2 cups flour
1 3/4 tsp baking powder
2 tsp vanilla
2 eggs
1 1/2 tbs lime juice (taste was faint, add up to a tbs more for additional flavor)
1 tsp lime zest
1/2 cup milk
Graham cracker crust
1 1/2 cups graham crackers crushed
1/2 cup melted butter
2 tbs sugar
3/4 cup butter softened
4 oz cream cheese Room temp
3 tbs half and half
1 tsp vanilla
1 tsp lime juice
1/2 tsp lime zest
3 1/2 cups confectionary sugar
Start with the graham cracker crust
Simply mix all of the ingredients
Line your cupcake holder
Firmly press 1 tsp-2tsp mixture into base of cup
Bake at 350 for 2 min just to set
For the cupcake
Cream together butter and sugar
Add eggs, vanilla, lime juice and zest
In a separate bowl, mix flour and baking powder
Add dry mix to wet
Mix in milk
Fill the cups half way up, since cupcakes rise, if you over fill they will be huge!
Bake at 350 for 18-20 min
Let cool
Cream butter and cream cheese
Add vanilla, lime juice, lime zest
Add sugar 1 cup at a time
Add half and half
(can add more or less milk for thickness)
Ice the cupcakes, garnish with graham cracker crumbs
