Whether you call it "pork roll" or "Taylor ham", this is a "Jersey" food that has become legendary here in the Garden State. Specifically, the Pork Roll - Taylor Ham, egg, and cheese sandwich.

No single person is officially credited with inventing the pork roll, egg, and cheese sandwich. It’s more of a New Jersey creation that evolved over time. The key ingredient, pork roll (also known as Taylor ham), was invented by John Taylor of Trenton in the 1850s, and people later started pairing it with egg and cheese on a roll, turning it into the classic breakfast sandwich New Jersey is famous for today.
By the way, to set the record straight, it is "pork roll," and that's what I have called it forever. If you disagree, you can let me know, but I only answer to "pork roll".

So, according to an article from NJ.com, one New Jersey eatery is doing a different spin on the Pork Roll, egg, and cheese sandwich. First thing is the "pork roll" is out and they are replacing it with two unique substitutes.
According to NJ.com, "Thyme Kitchen & Catering, located in Merchantville, is serving up two unforgettable egg sandwiches — one with a maple bourbon pork belly and another with smashed sausage patties."
That's right, pork belly and smashed sausage! The smashed sausage is described as "A savory breakfast sausage patty is smashed like a smash burger patty and paired with fluffy scrambled eggs, gooey Cooper sharp cheese and housemade — hot honey all nestled between Thyme’s signature everything egg bagel. The sandwich is salty, sweet and spicy, with an incredible tender texture."
They had this to say about the pork belly, "Tender, smoky pork belly is imbued with sweetness from the maple bourbon glaze, creating a beautiful contrast of flavor. The creamy, sharp notes of Cooper sharp cheese add a delightful touch to the bold pork and rich egg. Each bite is a perfect blend of savory, sweet and salty."
I must say I would definitely be down to try both of these sandwiches; they both sound delicious!
