Erica’s Sweets with Shawn & Sue
Erica is part of the WOBM Hometown Crew. She’s young and she has dreams. And in some way, we think we’re helping her get closer to her dream. She wants a bakery/sweet shop and you know what, she’ll have one someday! But for now she bakes for The Ocean County Breakfast Show every Friday morning and shares her everything home-made goodies!
This week’s sweet is a play on the “refreshing” sweet treat Strawberry Lemonade.
It’s a lemon cupcake with buttercream frosting and strawberry jam on top. This tasty sweet is perfect for a Summertime picnic or party. Very tasty!
3 – 4 cups confectionary sugar
1 cup softened salted butter
1 tsp. vanilla
3 – 4 tsp. half & half (or milk)
Erica’s Baking Tip Of The Week:
It’s simple to take a classic recipe and give it a new twist. For the lemon cupcakes I used my vanilla cake recipe but incorporated some new flavors. I used the juice of 1 1/2 medium lemons which is roughly 3 tbls. of lemon juice and the zest of 1 lemon. You can use more or less for tartness. This will work with almost any flavoring.
