New Jersey's largest food bank is challenging state residents to spend a week trying to live on food stamps.

If they accept the challenge, which kicks off Monday, they will be asked to try to live on the $31.50 per week average given to individuals receiving food stamps.

The challenge is organized by the Community FoodBank, which is New Jersey's largest distributor of food and groceries to nonprofit agencies.

Participants can sign up on the FoodBank's web site and share their experiences on the group's Facebook page.

Organizers say they want to promote a new perspective and a greater understanding of the more than 1 million New Jersey residents who struggle with "food insecurity," or the notion of not having enough to eat.
