It all started a little more than a decade ago with a small Point Pleasant location on Bridge Avenue. The original Bubbakoo's Burritos had only a few tables and shared their space with another Point Pleasant original, Jersey Mike's.

In the 12 years or so since then, the Ocean County original has grown to more than two dozen Garden State locations, from Parsippany to Atlantic City, Bubbakoo's fans can grab a Chiwawa across the state.

It's become a bit of hometown pride every time that I see a new Bubbakoo's pop up, so imagine my surprise when I was in Philadelphia this past weekend and I spotted the now familiar green sign:

When I got back home, I figured that I would stop by their website and see that the Philly location that opened last summer was their first foray outside of Jersey.

So imagine my surprise when I pulled up their locations page and saw a California outpost topping the list.

It turns out that few years ago, the Bubbakoo's team saw their popularity growing and kicked off a franchise plan. A plan that brought the restaurant count to more than 30 locations stretching to California to the west and Georgia to the south.

For me, every time I see a Bubbakoo's it's not only a reminder of home, but also a reminder of my friend Kevin who first brought me to that Point Boro original years ago.

Kevin passed due to complications of cystic fibrosis 10 years ago, but when you've lost someone, you know that sometimes the most random things will remind you of them.

For me, every time I see a new Bubbakoo's open, I'll think of my friend's memory spreading far outside of our small Ocean County community even all these years later.
