It's something to keep in mind as we approach Easter next weekend.

Can you believe Easter is right around the corner?  It feels like we were just unwrapping Christmas presents yesterday!

When most people think of Easter, eggs come to mind.  Do you know why Easter is associated with eggs?  It's a little odd when you think about it, since the Easter bunny delivers presents, and bunnies do not lay eggs.

According to English Heritage, it has nothing to do with bunnies, as expected.  Instead, eggs represent new life and rebirth, which relates to Jesus' resurrection.  You probably know that Catholics don't eat meat during lent.

But did you know it wasn't always like that?  The website explained that people abstained from eating eggs during Lent in Medieval Times.  Fascinating.

We as a society found other ways to appreciate the meaning of eggs during easter.  Kids and families participate in egg hunts.  And, many people enjoy decorating Easter eggs.  It's something I know I'll never get too old to enjoy.

People understandably don't like to waste food, so they'll often refrigerate the hard-boiled eggs they decorated and save them to eat another time.  My family has done it for years.  But I've never actually wondered if it's safe to do so until I came across an article on the topic.

According to Delish, it is safe to eat dyed Easter eggs if the dye is food-safe.  Many stores carry dye kits, so it's best to make sure that the box mentions that their dye is food-safe.  The popular egg-dying kit company PAAS, for example, uses food-safe dyes.

Other than that, Delish notes that you shouldn't eat the eggs if they've been left out for more than 2 hours.  My family likes to add names to decorated eggs and use them as "place cards" around the table, so that'd be a circumstance where you'd want to put the eggs back in the fridge before eating them.
