
Spring Cakeballs-Erica’s Sweets
Erica is a part of our Promotions crew here at WOBM. Her dream is to have a bakery so we have her come on The Ocean County Breakfast Show with us and share her recipes with you! These are delicious!
Spring Cakeballs
1 cup sugar
1/2 cup softened butter
2 tsp vanilla
2 eggs
1 3/4 tsp baking powder
1 1/2 cups flour
1/2 cup milk
-Combine butter and sugar in a mixer
-Add eggs and vanilla
-In a separate bowl, combine flour and baking powder
-Add the dry mix to the wet mix
-Pour in the milk and mix til fluffy
Pour in a greased baking dish and bake at 350 for 27-30 minutes
Let cake cool and crumble
Butter Cream Recipe
1/2 cup softened butter
2-3 cups confectionary sugar
1 tsp vanilla
1/4 tsp salt
2 tablespoons half and half
-In a mixer, cream together the butter and sugar
-Add remaining ingredients (can add more or less sugar for consistency)
Assembling the Cakeballs
-Once the cake has cooled, mix the icing and the crumbled cake
-Taking a tablespoons worth of the combo and roll into a ball
-Place the rolled balls into the fridge for 1-2 hours to set
-Using a crockpot, melt chocolate (recommend to use white and add coloring)
-Have desired toppings ready to go once you've dipped the balls
-Let harden in the fridge and Enjoy!
