Erica is part of the WOBM Hometown Crew. She’s young and she has dreams. And in some way, we think we’re helping her get closer to her dream. She wants a bakery/sweet shop and you know what, she’ll have one someday! But for now she bakes for The Ocean County Breakfast Show every Friday morning and shares her everything home-made goodies!

Ingredients
8oz cream cheese softened
1 1/2 sticks butter softened
2 tbs half and half
1 tsp cinnamon
1 tsp vanilla extract
4 cups confectionary sugar

Cream together the butter and cream cheese
Add the cinnamon and vanilla
Mix in the confectionary sugar
Add half and half- use as much as 4 tbs depending on the thickness.

The best thing about fall are the spices you can use for baking. For this cupcake, you can really experiment with different spices in the icing.  The cupcake itself has cinnamon, nutmeg, and ginger, so feel free to try any of those in the icing!
