Espresso Chocolate Chip Scones

2 3/4 cups flour
3/4 cups sugar
2 tbs baking powder
3/4 tsp salt
1 1/2 cup heavy cream
9 tbs cubes chilled butter
1 1/2 tbs instant espresso
1 1.2 tbs hot water
1 cup chocolate chips

*Use Paddle attachment on the mixer

-Combine flour, salt, sugar, and baking soda
-Add cubed butter and place in freezer for a few minutes
-Mix on low speed and gradually add chocolate chips
-Combine the hot water and instant espresso in a cup
-Slowly pour the cream into the flour/butter mixture
-Incorporate the espresso to the mixture
-Use your hands to knead the dough on a floured surface
-You can shape however you like, these are made into squares.  Get Creative!
-Chill in freezer for 15 minutes prior to baking
-Coat with additional cream
-Bake at 375 for 20 minutes

Espresso Glaze
1 1/2 tbs instant espresso
1 1/2 tbs hot water
1 1/4 cup powder sugar

-Mix the espresso powder with hot water
-Add to powder sugar and stir
-Drizzle over the scones and let cool

If you're not a fan of the espresso glaze, drizzle some melted chocolate!

Enjoy with a cup of coffee or tea!
