Erica’s Sweets with Shawn & Sue-Cannoli Cookie
Erica is part of our Promotions Department. She bakes delicious treats that she shares with us every Friday!
"Sometimes it can be fun to do a little twist on a classic. This week, a cannoli cookie!"
Cookie Ingredients
-1 cup softened salted butter
-3/4 cup sugar
-1/4 cup brown sugar
-1 egg
-1 tsp vanilla
-2 1/4 cup flour
1 1/2 tsp baking powder
1/2 tsp orange zest (fresh), use less if using dried
1/4 tsp cinnamon
1/2 cup finely chopped pistachio
Instructions
-Beat butter with sugar
-Add egg and vanilla
-In a separate bowl, combine flour, baking powder, zest.and cinnamon
-Mix the dry and wet mixtures
-Add pistachios
-Shape dough into 1-2 inch thick logs
-Freeze for at least an hour
-Cut cookies to desired thickness
Bake at 350 for 10-12 minutes
*Let the cookies cool and dip the ends in melted chocolate and sprinkle with extra pistachio before sandwiching with the filling
