Blueberry Scones–A Springtime Treat

Blueberry Scones
2 cups flour
1/2 cup sugar
1 tbs baking powder
1/2 tsp salt
1/2 cup cold butter diced
1/2 cup heavy cream
1 egg
1 cup blueberries (fresh)
1 tbs raw sugar (sprinkled on after scones formed)
1/4 cup heavy cream (use to coat scones prior to baking)
-In a mixer, combine flour, sugar, baking powder, and salt
-Add in diced butter, mixture will get crumbly
-Slowly pour in the heavy cream and egg
-Stir in the blueberries, don't over stir to break them
-Sprinkle flour on a dry clean surface, take dough and make into a rectangle shape 1/2 inch thick
-Cut into desired triangle sizes
-Place on wax paper on a baking sheet
-Using extra heavy cream, coat each scone
-Sprinkle with raw sugar
Bake at 400 for 15-18 minutes until golden brown. Enjoy!
