What Are Your Best Thanksgiving Leftover Recipes?

As I'm polishing off my first turkey salad sandwich of the week, there will be plenty more to follow, I'm curious as to how others in Ocean County stretch their Thanksgiving leftovers.

Of course there's the tried and true turkey salad that I mentioned.

The photo above is a great idea, a nice, hot open faced turkey sandwich with all of the trimmings.

My mother spent yesterday and today whipping up her homemade turkey soup.

And of course, besides just the turkey meat, there are also all of the sides to consider - the stuffing, the potatoes, the gravy, and the desserts (if they made it past Thursday, of course).
