I don’t know what’s come over me lately but I’m spending more time in the kitchen. (Cue the marching bands!) I’m cooking more. And I’m cooking better, healthier foods.
What’s inspired me lately are these cool sped up time lapse videos showing the recipes being made. The videos instill a sense of confidence. The recipes seem relatively easy to put together. I guess I feel a bit intimidated looking at recipe books with their long detailed instructions. The videos are my new favorite kitchen tool!
Here’s a glimpse at what’s been going on in my kitchen. A friend posted this video on Facebook which caught my attention: http://www.buzzfeed.com/christinebyrne/cheezy-vegan-spaghetti-squash#.lwk4YAdeY So I went to the store for all the ingredients, made the dish and found it to be filling and delicious. There was a little left over which I wound up mixing in to my homemade mac and cheese the following night. Turned out to be a yummy combo!
Then another friend posted a video of zucchini tots so I bought a bunch of zucchini. I shredded that, added bread crumbs, cheddar cheese, onions, and egg, formed them into little ovals. They came out of the oven very tasty.
The next recipe I’m going to try won’t be as healthy, but I expect it will be delectable. Waffle Iron Tater Tot Grilled Cheese. (You can click the link below). Thanks to another Facebook friend, this will probably be the big weekend indulgence.
These cooking videos are inspiring me and that’s a good thing. They’re helping me move away from frozen prepared foods and towards healthier items made with fresh ingredients.
