She wants a bakery/sweet shop and you know what, she’ll have one someday! But for now she bakes for The Ocean County Breakfast Show every Friday morning and shares her everything home-made goodies!

Zucchini Spice Muffins

3 cups flour
1 cup white sugar
1 cup brown sugar
3 cups grated zucchini (1 large or 3 small/medium zucchini)
1 tsp salt
1 tsp cinnamon
4 eggs
1/2 tsp nutmeg
2 tsp vanilla extract
2/3 cup oil
4 tsp baking powder

Mix dry ingredients in a bowl and put to the side
Grate and drain Zucchini
Mix zucchini, vanilla, eggs, and oil
Add dry mixture to the wet
Fill baking cups 2/3 full

Bake at 375 for 15-18 minutes

Sprinkle with cinnamon and sugar

Cinnamon Butter
1 stick salted butter
1-2 tsp cinnamon
1 tsp sugar

Combine ingredients in a pot
Once melted, transfer to a container and let harden

Spread butter on the muffins and enjoy!

*add chocolate chips to the muffins for a fun twist
