Erica’s Sweets with Shawn & Sue: Zucchini Muffins with and without Chocolate Chips
Erica is part of the WOBM Hometown Crew. She’s young and she has dreams. And in some way, we think we’re helping her get closer to her dream. She wants a bakery/sweet shop and you know what, she’ll have one someday! But for now she bakes for The Ocean County Breakfast Show every Friday morning and shares her everything home-made goodies!
Zucchini Spice Muffins
3 cups flour
1 cup white sugar
1 cup brown sugar
3 cups grated zucchini (1 large or 3 small/medium zucchini)
1 tsp salt
1 tsp cinnamon
4 eggs
1/2 tsp nutmeg
2 tsp vanilla extract
2/3 cup oil
4 tsp baking powder
Mix dry ingredients in a bowl and put to the side
Grate and drain Zucchini
Mix zucchini, vanilla, eggs, and oil
Add dry mixture to the wet
Fill baking cups 2/3 full
Bake at 375 for 15-18 minutes
Sprinkle with cinnamon and sugar
Cinnamon Butter
1 stick salted butter
1-2 tsp cinnamon
1 tsp sugar
Combine ingredients in a pot
Once melted, transfer to a container and let harden
Spread butter on the muffins and enjoy!
*add chocolate chips to the muffins for a fun twist
