1 cup water
3/4 tsp salt
1 1/2 cup flour
9 tbs butter
6 eggs
-Melt butter
-Once melted, add salt and water. Bring to boil
-Add flour and stir until it makes a dough paste
-Put dough in mixing bowl with paddle attachment on low speed to cool slightly
-Add eggs 2 at time
-Once the mixture resembles a cake like batter,  put in a piping bag and pipe onto greased tray
Bake at 400 for 25-30minutes
Cut in half immediately after taking out of the oven
3 cups heavy cream
1/4 cup powder sugar
Whip cream to make peaks.  Add sugar to Taste
Pipe filling into the eclairs
Dip into melted chocolate or ice with a chocolate ganache
