Erica’s Sweets with Shawn & Sue–Carrot Cake Cupcakes
Erica is part of the WOBM Hometown Crew. She’s young and she has dreams. And in some way, we think we’re helping her get closer to her dream. She wants a bakery/sweet shop and you know what, she’ll have one someday! But for now she bakes for The Ocean County Breakfast Show every Friday morning and shares her everything home-made goodies!
Carrot cake
Ingredients
2 cups sugar
2 cups flour
1 1/2 cup oil
2 tbs baking soda
2 tbs baking powder
1 tsp cinnamon
4 eggs
3 cups carrots shredded
8 oz can crushed pineapple
1/2 cup chopped walnuts
Cream oil and sugar for 4 minutes
Sift dry ingredients in a separate bowl
Add eggs one at a time to sugar mix
Add dry ingredients
Fold in carrots, walnuts, and pineapple
Bake at 350 for 18-22 minutes
Let cool
Frosting
8oz package of cream cheese. Softened
1/2 stick softened butter
1 lb confectionary sugar
2 tsp vanilla
Garnish with chopped walnuts
