Erica’s Sweets with Shawn and Sue–Whoopie Pie and Almond Cake
Erica is part of the WOBM Hometown Crew. She’s young and she has dreams. And in some way, we think we’re helping her get closer to her dream. She wants a bakery/sweet shop and you know what, she’ll have one someday! But for now she bakes for The Ocean County Breakfast Show every Friday morning and shares her everything home-made goodies!
This week Erica made us 2! Yum
Almond Cake
Ingredients:
1 1/4 cup sugar
1 egg
1 1/2 tsp pure almond extract
2/3 cup milk
1/2 tsp baking powder
1 stick melted margarine
- Beat together: sugar, egg, almond extract, milk
- Add flour and baking powder
- Add melted margarine
- Mix well
Bake in a well buttered bundt pan at 350 for 40-50 minutes, edges should be golden brown
*Garnish with powdered sugar and almond slices*
Whoopie Pie
Use favorite chocolate pie recipe
Plop dollops of cake batter on a buttered baking sheet
Bake for 12-15 minutes
*you can use any type of filling*
These were filled with a Caramel flavored butter cream! Yum!
