Chocolate Chip Angel Food Cake Minis

1/2 cup confectionary sugar

2/3 cup flour
1/4 tsp salt
8 egg whites
1/4 cup water
1tsp vanilla
1/4 tsp cream tartar
1/2 cup sugar 
1 cup mini chocolate chips (optional) 
 
 
-Whisk confectionary sugar, sifted flour,  and salt
-In a separate bowl, with the paddle attachment on the mixer, Combine egg whites, water, vanilla, and cream of tartar (mix on low until foamy) 
-Speed up to medium and add sugar slowly
-Mix on high speed for 3 minutes or more until forms peaks
-Add dry ingredients to egg white mix by folding in with a spatula (don't over mix)
-Stir in chocolate chips for a twist
 
Scoop into cookie tins and Bake for 18 min at 325
