A Mouth-Watering Cupcake-Erica’s Sweets
Erica is part of our WOBM Hometown Crew and her dream is to have a bakery one day and I just know she will. So she shares her home-made recipes with us and hopes you make these at your house.
Cinnabun Cupcakes
1 cup sugar
1/2 cup softened butter
2 tsp vanilla
2 eggs
1/2 cup skim milk
1 1/2 cup flour
1 3/4 tsp baking powder
1 tablespoon cinnamon
1/2 additional sugar
-Mix 1 cup sugar and butter
-Add vanilla and eggs
-In a separate bowl, combine flour and baking powder
-Add dry mix to the wet mix
-Add in milk
Combine the additional cinnamon and sugar in a bowl.
In a greased cupcake pan, scoop 1 tsp of batter into each holder. Sprinkle each with 1/2 tsp of cinnamon sugar mix. Add another tsp of batter. Sprinkle the top with more cinnamon sugar
Bake at 350 for 18-20 minutes. Let cool
Cinnamon sugar icing
-2 cups softened butter
-8 cups powdered sugar
-4 tsp vanilla
-6 tablespoons half and half
-1 tbs cinnamon
Combine:sugar, flour, vanilla, and half and half.
Scoop about half the batter into a separate bowl.
Add the tbs of cinnamon to remaining icing and mix.
Using a piping bag, scoop half plain icing and half cinnamon icing.
Ice the cupcakes and Enjoy!!
